Joys of Jell-O


While my daughter is having her 15th birthday party outside right now and it's probably the last big grill out on the deck, fire pit, games on the lawn night of the summer, I'm nostalgic for my grandmother's summer parties.   She must have cooked for days but it seemed effortless, the kids (us) shuttled everything up to the screened house in the back yard. Plastic corn holders, twinkle lights, torches, cutlery caddies, tasseled napkins, floral tablecloths and bamboo paper plate holders.  Every meal no matter what the occasion had some kind of Jell-O salad formed in the copper molds that hung on her kitchen wall. The all time favorite and still my guilty pleasure is the Lime Jell-O with Pineapple, Cream Cheese and Pecans.  I found this photo in an old The New Joys of Jell-O book that I picked up at a book sale and it reminded me of everything fabulous about the 70's parties that I grew up with.

Strange but Delicious Lime Jell-O with Pineapple, Cream Cheese and Pecans


Ingredients:
1 pkg. (3 oz.) cream cheese
1 pkg. (3 oz.) lime Jello
1 3/4 c. boiling water
1 can #2 crushed pineapple, drained
1/2 c. chopped pecans
Instructions:
Thoroughly blend cream cheese and Jello. Add boiling water. Stir until cheese mixture is completely melted. Chill until cool. Stir in pineapple and nuts. Chill again until set. Serve on beds of lettuce or make in a Jell-O mold, if desired.
